It's not the woocommerce files that I need to change, I need to add functions to the functions.php file to alter the messaging behind the back order products and a few other tweaks that I know how to do and would usually put in a child theme but had read that lay theme isn't compatible. Will give it a try.

for now i think its best to not use a black background color for your website if you have a shop, because you'll run into other parts of the shop that dont work well with black backgrounds

the cart menu point shows the count

read the shop tutorial it shows how to add the cart menu point

the quantity input is now hidden by default

customize → woocommerce → single product

then here u have options for "small" "big" "round" for the quantitity inputs "quantity input type":

hey man maybe in the customizer make the normal mobile menu show up
and as mobile menu style choose "desktop style" so it will just be a menupoint "cart"

you can also change the menu in appearance -> menus

i think the desktop style mobile menu style doesnt include any icons so it doesnt include the cart icon

if you want the cart icon just choose another menu style other than desktop menu style.
then use css to hide things except the cart icon
