I would like to know how or if I can do two different text formats in only one title of a project? Thank you.

You could use the "project description" feature where you can use any number of textformats.
Here is a little explanation: http://laytheme.com/documentation.html#project-description

In the Customizer you can also hide your project titles and just use the project description if you like.
